Today, I'm going to show you how to make a restaurant-quality Dashimaki Tamago (だし巻き卵) recipe that's just like the ones you can get in Kyoto. This classic Japanese rolled omelette is light, fluffy, and bursting with umami. In this variation of tamagoyaki, a high ratio of dashi to egg gives it a melt-in-your-mouth texture bursting with savory dashi stock. In this step-by-step guide, I'll show you the technique for rolling this Japanese omelet in a rectangular tamagoyaki pan as well as in a regular round frying pan.

      Allspice is a single spice. I have whole allspice in my pantry. It's a large, round, blackish seed. It's called allspice because it tastes like a combination of nutmeg, cinnamon, and clove.

      Hey, friend! Yes, you can make this with just about anything you like. I often use cooked tofu like astuaage or aburaage. As long as it's not too watery, and cooked is better than raw for tofu. Other types of vegan proteins will work, too. And I don't usually add the egg, either. I also like to add extra veggies to mine. You may have to adjust the seasoning to make up for the lack of salt from the ham. Hope this helps!😊

    Thankyou very much for this recipe. Just an observation: for some raw shiitake may be unsafe when the uncooked mushroom is eaten. I wouldn't use it on eggs or tomatoes, but I would gladly use it in a sauce or in a soup as long as it's cooked.
